Stilton and Chutney Rarebit Nibbles

Elegant canapés can make or break a party or get-together, and these bites are super tasty.

Total Time: 55mins

Ingredients:

Chutney: • 2 red onions (peeled, and thinly sliced)

• 4 tbsp Muscovado sugar

• 3⅓ ounces balsamic vinegar

Rarebit: • 10½ ounces stilton (crumbled)

• 7 ounces Parmesan cheese (freshly grated)

• 2 tbsp crème fraiche

• 2 medium-size eggs (beaten)

• 2 tsp wholegrain mustard

• Salt and black pepper

• 6 slices German rye bread

Directions: 1. Add the red onions along with the sugar and balsamic vinegar to a pan, and over low heat, cook while occasionally stirring for 25 minutes. The mixture should be sticky and gloopy. Set aside to cool.

2. In a bowl, combine the stilton with the Parmesan, crème fraiche, eggs, and wholegrain mustard. Taste and season and place in the fridge, to chill.

3. When you are ready to serve, heat the grill and lightly toast the rye bread. Cut the bread into chunks.

4. Arrange the bread on a baking sheet.

5. Spread 1 tsp of chutney over each chunk before piling on the cheese mixture. 6. Grill until bubbling and browned, for 3-5 minutes.
